Brider restaurant

Chef Steven Redzikowski (Food & Wine regional "People's Best New Chef" and 2017 James Beard Finalist in Best Chef Southwest category) and restaurateur Bryan Dayton –the successful partners behind award-winning restaurants Oak at Fourteenth in Boulder and Acorn in Denver enlisted Arch11 once again to design their fast-casual rotisserie restaurant called Brider (French for “tying” and championed by the likes of Julia Childs for optimal roasting of meats) which opened in the newly minted five-story Nichols Building in Denver's rapidly developing Central Platte Valley.

The raw space didn’t have a history or patina of its own so Arch11 principal Ken Andrews looked for inspiration in traditional open markets resulting in a timeless “old world” feel. The design team used a palette of classic materials including expansive marble pastry counters with glass cases, reclaimed wood, chalkboard menus and steel shelves to convey warmth and familiarity. A layering of textures, geometric wall planes and custom built-ins, along with “bright green flashes” of color and Knoll furnishings mingle the old soul feel with the clean lines of modernism and the neighborhood’s renewed vitality. The sunny space, which can seat around 80 guests and an additional 32 on the patio showcases its food and craft beer offerings as if it were part art installation. In a series of subtle architectural gestures, Arch11 crafted a setting that does not overwhelm, but allows the space to celebrate the food and chefs who create it.
