Paint (art of your choice) on the back of matte-finish plastic panels with
Alkydpaint. Then roller the whole back to fill any clear background left (again with Alkyd paint). Take color samples (from photos, magazines, actual flowers, etc.) to the paint store and have them matched for your own custom colors. Create a "pattern" on paper to place under the upside-down plastic and paint following the pattern. Attach to sheetrock with white silicone caulk (use picture stick-up "gum" also to hold in place while silicone dries). The Alkyd won't mildew (and water-based paint won't stick to the plastic). Add bead of silicone at the counter edge and on top of the splash.
