McDonough to Diefenbach (Part 4): 80% to 90% of all food consumed in the kitchen is organic, local (either site sourced or within 100 miles), or both. All non-fatty foods are composted. Fatty foods (meat and fish proteins) are disposed of onsite. e-House is net-zero carbon; and moving toward net zero energy (structured progression to allow experimentation, data gathering, and reporting of results). e-House exceeds USGBC LEED Platinum criteria.

McDonough to Diefenbach (Part 3): Range hood is first of its kind outside air balanced ventilation that has zero effect on heating and cooling of house (also developed at e-House). e-House uses wind power for electricity, so kitchen appliances are green energy powered. All finishes are low-VOC; all bamboo is FSC certified. Awning windows used are the most energy-efficient type (operable for seasonal fresh air use). 50% of furnishing are used/refurbished.

McDonough to Diefenbach (Part 2):
Exterior walls are high thermal mass aerated autoclaved concrete--one of the greenest high-performance materials for construction in the world. Roof is super-insulated (exceeds R-60)
Lighting has computer controls; also uses daylighting strategies; advanced LED replacement fixtures are in development (e-House-based research initiative).
Fireplace is ultra-high efficiency and 95% clean burn Rumford using site-sourced fuel; wood-fired oven is same.

Architect McDonough replies to Diefenbach (Part 1):
Appliances meet or exceed EnergyStar rating; dishwasher is the most energy efficient sold.
Stainless steel is used on work surfaces wherever possible because of its durability.
Heating is high-efficiency low-carbon-impact hydronic radiant heat (works with solar hot water); cooling, air filtration, and dehumidification are ultra-low energy direct exchange geothermal (developed with NYSERDA and first implemented at e-House).

Aside from the bamboo cabinets what was so "ecological " about this kitchen?
